Breakdown of protein starts in the stomach. Pepsinogen is produced by chief cells which comes in contact with hydrochloric acid becoming pepsin. That pepsin breaks down the proteins into polypeptides. The enzyme that breaks down proteins in the pancreas is trypsin and chymotrypsin which breaks down into dipeptides. As the final product, the small intestines break down protein into it's final product with peptidase.
