Uruguay, traditionally known for meat exports, has become a leading caviar producer in the Southern Hemisphere and the eighth largest exporter globally. Esturiones del Río Negro, established in the 1990s, attributes its success to mimicking the sturgeon's natural environment. The company has penetrated demanding markets like Europe and the US, and aims to produce the coveted Beluga caviar. Despite Uruguay not being a primary market, the firm produces 7 tons annually, with a goal of 10 tons by 2018, competing with China, the world's top producer.
