Quinoa, an ancient grain revered by the Incas, has a rich history dating back to 3000-5000 BC in the Andes. Despite near extinction during the Spanish conquest, it survived due to its resilience. Rediscovered in the 1970s, quinoa is now cultivated globally. Known as a pseudo grain, it is related to spinach and beets. Quinoa comes in various types, each adapted to different climates, and is grown worldwide, including in Canada, France, and India.
